Ingredients:

2 lbs. Turkey London Broil, Turkey Tenderloin or
Pork Cutlet, cut in single-serve portions
½ tsp kosher salt
½ tsp or more garlic, minced
Extra virgin olive oil

1 cup seasoned breadcrumbs (We like Panko)
1 ½ cups grated Locatelli
2 Tbsp fresh parsley
Extra virgin olive oil

Instructions:

Toss meat with olive oil, salt, and garlic. Let marinate for at least 15 minutes. Preheat oven to 425℉.

Stir bread crumbs, grated cheese, parsley until thoroughly combined.

Dredge meat in the crumb mixture and roll around to coat. Press the meat firmly into the bottom of the bowl with the palm of your hand to make the crumb mixture stick tightly.
(breadcrumbs won’t coat meat as dense as
typical egg/flour method)

Lay strips on an oiled baking sheet. Drizzle more olive oil on each piece and place in the top upper third of oven to brown.

Bake for 10 minutes total, rotating the sheet tray halfway through. Cut a piece to test for doneness.
We use a convection oven, cooking time may increase in a standard oven.
